Jollibee is the undisputed king of Philippine restaurants, operating more stores in the archipelago than any other food chain. It has four branches in Dumaguete so far, the first one (pictured here) opened in 1996. My top picks at Jollibee are its spicy chicken joy (breaded fried chicken), regular yum (burger bun+patty+mayo), milo blast (vanilla soft-serve ice cream mixed with milo cereal and powder) and longganisa :).
